A well-organised and vibrant London Coffee Festival last week came to an end. We all have great memories to share and I’m already looking forward to a bigger and even better coffee festival next year in 2016.

An electric atmosphere with lots of delicious cold brewed coffee, chocolate, nuts, drinks and the widest variety of coffee equipment is how I would sum up the 2015 coffee festival in London.

The festival also hosted Coffee Master’s 2015 competition, where some of the world’s best baristas were competing for the prestigious "coffee master" title and a huge £5000 prize. Congratulations to James Bailey, the new Champion.

It was great to see the “Hario V60 range” being used through-out the event by the competitors. However, amongst coffee enthusiasts the NEW Hario Cold Brew Filter-in-Bottle received the most attention and praise. Of course Hario syphons, didn’t go unnoticed either.

What is a Cold Brew?

A cold brew is cold coffee or tea drink, which usually takes at least 8 hours to steep in a fridge. For instructions on how to prepare one scroll down to the bottom of this page.

How Does Cold Brew Coffee Taste?

The cold brewed coffee taste is less acidic, smooth, rich and flavourful. What's more it doesn't take any longer to prepare than normal cup of coffee. It just that it takes a bit of planning in advance.

How to Prepare Cold Brew Coffee?

1. Add cold water into the bottle.
2. Insert the coffee grounds into the filter.
3. Place the cold brew bottle in the fridge for a minimum of 8 hours.
4. Serve with ice for extra coolness.

Brewing speciality coffee is popular amongst baristas but many coffee-enthusiasts enjoy brewing lovely sediment-free coffee with V60 dripper as well. It is a straight-forward process but just like everything else in life - practise makes perfect.

If you've watched a barista brewing coffee by hand a few times before, you might just, get away without reading any instructions or guides. However, to clear things up for the newbies, we have created straight-to-the-point instructions and called it "how to brew coffee using Hario V60 dripper guide".

What's a V60?

For those who are wondering what is a V60 dripper, here is the picture of it below. This particular coffee dripper is made of copper - a particularly high-end dripper, but they come in ceramic for maximum heat retention, cost-effective plastic, and heat-proof glass. Also, you can choose from three different sizes 01 / 02 and 03, depending on your needs.

Without further ado, lets get started.

How to Brew Coffee With Hario V60 Dripper: Required Gear

First things first.

Get the Hario brewing equipment out. You will require some of the following tools.

  • V60 Dripper (Glass/Plastic/Ceramic)
  • Fresh pH Neutral Water
  • Hario skerton or Mini Mill
  • Hario Kettle
  • Freshly Roasted High Quality Beans
  • V60 Range Server
  • V60 Paper Filters
  • Drip Scales
  • Cup or Glass

You only need a V60 dripper and some paper filters to get started, but the additional coffee equipment such as Hario scales, does help the brewing process tremendously.

Once you have your gear set-up, you are ready to brew some delicious coffee.

How to Brew Coffee using V60 Dripper Guide

  1. Add 600ml of water into the Hario kettle and turn it on.
  2. Weigh 15g medium fine grind coffee.
  3. Place the paper filter on the V60 dripper and pour some hot water to pre-heat the dripper and remove any possibility of paper taste transferring to the final brew.
  4. Remove the rinse water and add the coffee grounds into the V60 filter paper.
  5. Place The V60 range server and the V60 dripper on the scales reset the scales to zero weight.
  6. Pre-infuse the coffee grounds with pour over kettle.
  7. Without pouring on the paper filter, add the rest of the water until scales read 250g.
  8. Enjoy hand brewed speciality coffee!

How to brew coffee with Hario dripper: Conclusion

The first thing to remember when brewing specialty coffee with V60 is that you must wet the V60 paper filters to ensure that none of the paper taste gets transferred to the coffee. This also pre-warms the dripper and serving vessel or cup.

Other brewing components such as the water temperature, brewing time and the amount of coffee grounds you add will also affect the final coffee taste.

Grind size plays a vital role too. If you grind the grounds coarser you will get a weaker coffee taste, but if you grind it finer then you will get the opposite outcome.

We recommend medium grind for the V60, about the size of granular sand (For more info on how to grind the grounds go here).

It's a trial and error process before you discover the perfect coffee taste. One thing for sure, nobody in the world can make a better cup of coffee than the one you make for yourself.

Our modern hectic lifestyle can make us forget to appreciate and enjoy the simple things in life, such as health, friends and of course brewing delicious coffee with a V60 coffee dripper.

We have prepared 6 quick tips for better pour-over coffee for those of you that are new to the Hario V60 routine. If you follow the tips below, you will get the most out of your V60 method and you will also be able to drink the most delicious coffee that you'll love and share with others.

6 Quick Tips for a Better Pour-Over

1. Freshly Roasted Coffee Beans

There is a reason why this one is at the top of the list. Coffee is at its best from 3 days to about 3 weeks after being roasted. If you think you will get away with some cheap supermarket coffee beans, that have been sitting on the same shelf for months - you can simply forget it! We would recommend you find a decent local coffee beans roaster near you. Google it! It will only take a second. There are some really excellent roasters who can make it even more easy with a coffee subscription service. There are a few coffee beans subscriptions service out there. For just a few quid per month they will send you freshly roasted beans to your doorstep regularly.

2. High Quality Coffee Equipment

This one is a no-brainer. If you love coffee then you should love the coffee gear that you brew it with. Whatever you do, don't try to knock a hole in a ceramic cup just to see if it will work as a coffee dripper and don't even think of constructing a coffee syphon from light bulbs like this "clever" guy did. Stick to what barista world champions are using and you will be a winner in the long run. Start with a plastic Hario dripper 02 (it only costs a fiver!), or get the HARIO ceramic white 01 coffee dripper. Other dripper options are available in glass or metal, including the beautiful V60 copper dripper that will last forever!

3. Grind Size

You might want to experiment with the grind size but medium grind is just fine to start with. The most popular hand coffee grinders are Skerton and Mini Mill to do the job. They are consistent,  adjustable and come with ceramic burrs for reliability.

4. Wet the Paper Filters

Rinse the V60 coffee dripper paper filters with hot water. This serves two puropses; it will warm the dripper and vessel in preparation for your brew and it will also ensure there is absolutely no paper taste in your coffee.

5. Pre-infuse the coffee grounds

Another important step is to pre-infuse the coffee grounds. Once coffee grounds have been saturated you will get more consistent results because the coffee extraction will be more even. Ideally you would like to pre-infuse between 30 - 60 seconds. You will see the "bloom" form as the grounds release carbon dioxide; the fresher the beans, the more pronounced this bloom will be.

6. Pour-over rate

And last but not least - the pour-over rate. Get your timing right by timing your pour-over rate and discover your preferred taste. Timing also helps to get consistent results every single time. The perfect tool for that is the Hario scales. With the scales from Hario you can set the timer to your preferred brewing time and enjoy a delicious cup of coffee brewed by yourself.

To sum it up. Make sure you buy fresh coffee beans and high quality Hario coffee gear, get the grind size right, pre-infuse and pour consistently by timing the pour-over rate. So there you have it folks, six quick tips for better pour-over coffee.

Four days, three coffees, two halogen heaters, one stand and thousands of guests made Brewed by Hands experience at London Coffee Festival. Positioned amongst some of the UKs best in Coffee sat Brewed by Hand's stand in the 'Shoreditch' room.

On display we had the olive wood range that through its elegant and innovative design initiated much admiration and enquires.

Our interactive stand layout meant that visitors were able to explore the entire range for themselves. Also popular and drawing interest were the cold brew bottles, copper dripper/kettle and drip pot wood necks.

The quality, longevity and design of these ranges are unparalleled. Hario are at the forefront of the hand brewing industry with their innovation and composition and this was truly reinforced through our feedback at the festival both from those in the trade and domestic users.

The star of the show was without a doubt the vast model syphon; a novelty that customers adored; it generated a few laughs as well as being a great interactive talking point.

Running close second had to be the normal sized syphon in use on the brew bar. Being such an unusual and visually appealing piece of equipment coupled with its ability to produce a balanced coffee accentuating delicate taste notes and a tea like mouthfeel meant that we just had to exhibit this method to our keen visitors.

The scientific feel of the set up atop the glowing red of the halogen heater guaranteed to attract a crowd which was fantastic as this is what allowed us to demonstrate and explain the innovation of this brew method.

Moving away from the expected method of brewing, the syphon offers a degree of theatrics as well as a new and exciting way to brew coffee both commercially and domestically. The coffee festival was the perfect opportunity for us to exhibit this and showcase the best of our tea and coffee equipment. In order to ensure that our products were recognized for their full potential, we paid meticulous attention to our choice of coffees.

In the hopper we cycled through Union Hand Roasted's Los Lohones from Panama as well as a honey geisha from the same, a Colombian from Clifton coffee roasters and Blackburn Estate; a Tanzanian from Ozone.

Using the new electric grinder from Hario, soon available to buy on the website and a great progression from hand grinding for the passionate domestic consumer, we developed recipes tailored to each coffee in order to demonstrate the full capabilities of the Hario gear.

We had some fantastic feedback regarding the coffee we brewed as samples for visitors and addressed a mass of interested queries and questions regarding the syphon, how they work and the benefits of using them.

We can conclude that our experience at the coffee festival was a positive and successful one, having forged and developed new trade relationships as well as exhibiting the potential of the Hario range to customers and encouraging a greater customer interaction with home brewing.
